Did you know that November 17th is Homemade Bread Day? Bayview Resident Betty Blakney turns out four loaves of delicious homemade banana bread each week in Bayview’s activity kitchen. She uses a well-memorized recipe from a family cook book created years ago by an aunt who was a missionary in Burma.
With overripe bananas donated by her church, University Temple United Methodist, Betty expertly whips up her batter – deftly peeling bananas, cracking eggs, and stirring in the flour and spices. Then it goes in the oven where, as it bakes, it carries a sweet aroma to anyone lucky enough to be nearby.
A labor of love, Betty has always donated three of the loaves to her church to be served as refreshments in their thrift shop. The fourth stayed at home for her family but since moving to Bayview a few years ago, the fourth loaf is always happily shared with fellow residents!
